The former executive in 2004 left his employer of 19 years, the $5 billion metals trader David J. Joseph Co., to open a high-end wine store. But he's doing so in a small way: His Kenwood store, called MicroWines, will specialize in labels made in limited batches, mostly of 500 to 600 cases.

In others, you get a little more provided randomly on the shelf: magazine ratings, handwritten tags or advertising. At microWINES, a new independent wine store that opened in Kenwood late last year, a customer sees nothing on the shelves but wine, about 450 labels, neatly stashed on handsome wood shelving.
